There are times when you need to import an entire course you set up into another course. This may be because you have multiple sections or because you need to copy content from a past course into the next run. You can use the "All content" option when importing to do this.
You may not want to always bring over all content from one course to another in Canvas. Sometimes you have a couple quizzes or one assignment you want to copy over to another course. You can use the "Select specific content" option when importing to do this.
When it comes time to import content from a past course into a new course, you have to change the due dates from the past course. It can be a pain to individually change those due dates. In Canvas you can adjust all the due dates at once by using the "Adjust events and due dates" option when importing.
